Ingredients

    1 c Long Grain White Rice
    1 c Coconut Milk
    1 c 99% Fat Free Chicken Broth
    Pinch of Salt

Directions

In a large saucepan over high heat, combine coconut milk, chicken broth and salt; bring to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 to 25 minutes, or until liquid is absorbed and rice is tender.
