Introduction

I found this recipe on the Bariatric Recipes yahoo group website. The website is geared toward bariatric patients. I changed a couple of ingredients to lower the fat content. There wasn't any nutritional info listed with the recipe, so I decided to enter the information here so I would have it in case I decide to make this dish.

Number of Servings: 6

Ingredients

    1 Tbsp Extra Virgin Olive Oil
    18 oz boneless, skinless chicken breasts
    3/4 tsp black pepper
    2 cups chicken broth, fat-free, low sodium
    1.5 cup dry mushrooms, sliced
    1/3 cup onion, chopped

Directions

Heat olive oil in a large skillet on medium heat. Season the chicken breasts with pepper. Add chicken to pan and cook until both sides begin to brown (about 15 min). Add the mushrooms and onions and saute until tender. Pour broth over chicken; cover pan tightly and simmer on low for about 10-15 minutes until chicken is no longer pink inside and is tender.
