Introduction

Number of Servings: 8

Ingredients

    1 can black beans, drained and rinsed
    1 can white beans (Northern or Canellini), drained and rinsed
    1 cup chopped sweet red bell pepper
    2 medium tomatoes, seeded and chopped
    1 cup frozen sweet corn kernels
    1/2 cup chopped cucumber, with or without peel, seeded
    1/2 cup white wine vinegar
    1 tablespoon white sugar (or substitute), or to taste
    1/2 teaspoon salt, or to taste
    1/4 teaspoon ground black pepper, or to taste

Directions

In large bowl, mix beans, bell pepper, tomatoes, corn and cucumber until thoroughly combined.

In small bowl, mix vinegar, sugar, salt and pepper, pour over salad and mix well.

Refrigerate.
Serves 6 as a main course, 8 - 10 as a side.
