Cauliflower Rice Bake

Introduction

Easy one-dish meal that provides lots of protien and vegetables. Easy one-dish meal that provides lots of protien and vegetables.
Number of Servings: 3

Ingredients

    White Rice, long grain, 1.5 cup
    Cauliflower, raw, 2 cups
    Mushrooms, fresh, .75 cup, pieces or slices
    Onions, raw, .25 cup, chopped
    Swiss Cheese, 1 cup, shredded
    Vegetable Bullion
    Parsley
    Salt and Pepper

Directions

Cook rice (I like to use left over rice). Cut cauliflower into pices and boil in water with bullion until slightly soft. Don't over cook. Drain and mix with mushrooms, onion, rice, and cheese. Add parsley, salt, and pepper to taste. Put in a greased baking dish and bake at 375 for 20 mintues or until lightly browned.
