IntroductionServe with enough fruit to get your 30 carbs for breakfast. Very filling. Serve with enough fruit to get your 30 carbs for breakfast. Very filling.
* 1/2 cup of ground flax seed meal
* 2 eggs
* 1/4 cup of vanilla soy milk
* 3 Tablespoons of cottage cheese
* 1/4 teaspoon baking powder
* 1/4 t. cinnamon
Cook until each side is lightly browned.
Using a 1/4 cup measure, should make 5 pancakes (servings)
Serve with butter and a low-carb store bought syrup. Or for an interesting low-carb topping, mix 1 Tablespoon of sugar-free jam with 1 and 1/2 Tablespoons water and microwave for 45 seconds.
Note: if not adding cottage cheese, remove 6.18 cal and .24 carbs per serving (each pancake)
