QCSAHP - Manicotti

Ingredients

    1/2 box Pasta, manicotti
    1/2 tablespoon Oil, vegetable
    7 1/2 oz Cheese, ricotta
    8 oz Cheese, Cottage
    1/2 cup Cheese, mozzarella, shredded
    1/2 teaspoon Salt
    1/4 teaspoon Pepper, black
    1/2 tablespoon Parsely, fresh
    1 each Egg
    1 1/2 cup Spaghetti sauce

Directions

To prepare for group
1. Boil manicotti according to package directions, adding oil to water so they won't stick together.
2. Mix ricotta cheese, cottage cheese, mozzarella cheese, Parmesan cheese, salt, pepper, parsley,
and eggs.
3. Drain manicotti, run cold water over it. Stuff each manicotti with cheese mixture.
4. Place them on no stick foil.
5. Bag it up into pre labeled freezer bags
6. Bag up spaghetti sauce.
7. Freeze flat.

Cooking Day
1. Preheat oven to 350.
2. In a 9x13 pan, put a layer (about 1/4") of spaghetti sauce.
3. Arrange frozen manicotti on the sauce layer.
4. Pour the rest of the spaghetti sauce over the top.
5. Cover and bake for 45 minutes.
6. Uncover, add a thin layer of grated Mozzarella cheese.
7. Bake uncovered an additional 15 minutes.
