Beef and Black Bean Chili

Ingredients

    1LB lean ground beef4 sliced celery stalks1 yellow bellpepper1 package of mushrooms1 jalapeno pepper (deseeded and minced)1 large garlic clove minced2 14.5oz cans diced tomatoes2 15.5oz  can black beans, rinse and drained3 cups water4tbsp tomato paste3tsp chili powder2tsp ground cumin2tsp dried oregano, crumbled

Directions

Spray a large nonstick saucepan with nonstick vegetable oil cooking spray and set over medium heat.  Add the beef and cook, breaking it up with a wooden spoon until browned, about 3 to 5 min.  Drain off any fat.Add celery, bell pepper, mushrooms, jalapeno, and garlic.  Cook stirring occasionally, until the vegetables are softened-about 8 min.  Add the tomatoes, beans, water, tomato paste, chili powder, cumin, oregano, and bring to a boil.  Reduce the heat and simmer, uncovered, stirring occasionally, until chili is thickened- about 45 mins.  Portion and serve
