Pasta Primavera

Introduction

This is so delicious, you don't even know that you are eating healthy food. All of my picky children liked it and went back for more! This is so delicious, you don't even know that you are eating healthy food. All of my picky children liked it and went back for more!
Number of Servings: 8

Ingredients

    10 cups mixed vegetables, (broccoli, carrots, cauliflower, peppers, mushrooms, zucchini)
    12 ounces dry pasta
    1 large onion, chopped
    2 tsp garlic
    1 T. olive oil
    1/4 tsp salt
    1 1/2 cups chicken broth
    1/2 cup evaporated milk
    1/4 c. cornstarch
    1 tsp basil
    2 tsp oregano
    1/4 tsp pepper
    1/2 cup parmesan cheese

Directions

Boil pasta until done. Chop vegetables. Saute onions and garlic in oil for 1 minute. Add veggies. Continue to cook until veggies are soft. Mix together chicken broth, milk, and cornstarch. Add to veggies, cook until thick and bubbly. Add spices and cheese. Mix together with pasta. Serve.
