D's Chicken Tortilla Soup

Introduction

low cal, low fat, great side dish or meal. You can add beans (not included here), or thinly sliced corn tortillas when served (not included here), or some cheese when served (not included here).

Number of Servings: 5

Ingredients

    4 frozen chicken breasts (can use thawed)
    1cup of your fave salsa (I used homemade, chunky)
    about 2tsp of both Oregano and Marjoram
    2 chicken bouillon cubes
    about 6cups water (enough water to cover the chicken - it will be reduced later)

    You can sub chicken stock for buillon cubes - if that is the case you'll have to use less water.

Directions

I placed all ingredients in a stock pot, put on med heat, cover and let it cook until chicken is cooked through. Once chicken is cooked through - I pull out the chicken on at a time, and chop/shread it down to smaller pieces and put back in the soup. I then let it sit on low/med heat to reduce the water.

For the salsa - you can use almost any kind you like. I've used homemade chunky style and store bought before. You can add more if you want as well (although the recipe is calculating only 1 cup.)

For serving - I add some cheese (mexican blend or 2%cheddar) and I slice some corn tortillas to add to the soup. (Both of these suggestions are not included in this nutritional info for this soup.)

I've known people to add beans (I haven't done that yet).
