Introduction

This is a great cool weather meal. It might be a bit spicy for some so the jalapeno peppers can be adjusted or left out altogether. This is a great cool weather meal. It might be a bit spicy for some so the jalapeno peppers can be adjusted or left out altogether.
Number of Servings: 4

Ingredients

    1 t. olive oil
    1/2 c. onion, chopped
    1 clove garlic, diced
    1 - 4 oz can diced jalpeno peppers
    1 - 4 oz can chopped green chiles
    2 T. ground cumin
    1 t. dried oregano
    1 t. cayenne pepper
    2 cans chicken broth
    2 cups cooked, diced chicken breast
    2 cans great northern or other white beans
    Shredded cheese (optional)

Directions

Saute onion and garlic in the olive oil.
While onion and garlic are cooking, boil chicken breast.
Add the peppers to the onion and garlic
Add the spices to the onion and garlic.
Add chicken broth to onion, garlic, pepper and spice mixture.
Dice cooked chicken and add to mixture.
Heat through and simmer about 20 minutes.
Serve with shredded cheese if desired.
Add water or additional chicken broth if needed.
Makes four one cup servings
