THIS IS EASY TO MAKE AND IS GREAT TO TAKE TO LUNCH. I MAKE THE SOUP THAN STORE IN 1 LITRE MASON JARS. THIS IS EASY TO MAKE AND IS GREAT TO TAKE TO LUNCH. I MAKE THE SOUP THAN STORE IN 1 LITRE MASON JARS.

Ingredients

    2 TBLS BUTTER
    3 CUPS LEEK
    6 CUPS CUBED POTATO
    4 CUPS CHICKEN BROTH ( LOW SODIUM)
    2 CUPS MINCED CARROTS
    1 CUP BUTTERMILK

Directions

MELT BUTTER AND SAUTEE LEEKS THAN ADD EVERYTHING EXCEPT THE BUTTERMILK TO POT AND BRING TO BOIL.

SERVE AND ADD A BIT OF BUTTERMILK

THE OTHER THING I DO WITH THIS RECIPE IS PUT IT DOWN IN MASON JARS FOR FUTURE USE - IT IS GREAT.

  • This is similar to a soup that I make. Rather than buttermilk, I use low fat half-and-half. You could also cut more fat by starting with olive oil instead of butter. - 1/17/09
