Introduction

This is quick and easy dish to make. It has a little spice to it but not too hot. We also sub lite smoked sausage for the chicken but the fat and calories are higher. Ingredients

    2 teaspoons olive oil
    2 boneless skinless chicken breasts, cut into bite-size pieces
    1 onion, diced
    1 red bell pepper, diced
    2 tablespoons chopped garlic
    1/4 teaspoon cayenne pepper
    salt and ground black pepper to taste
    2 cups uncooked brown rice
    1 can black beans, drained
    1 can diced tomatoes
    4 cups chicken broth , low sodium
    3 bay leaves
    2 teaspoons Worcestershire sauce
    1 teaspoon hot pepper sauce
    1 teaspoon liquid smoke

Directions

Heat oil in a large pot over medium high heat. Saute chicken until lightly browned, about 5 minutes. Stir in onion, red pepper and garlic. Season with cayenne, salt and pepper. Cook 5 minutes, or until onion is tender and translucent. Add diced tomatoes, black beans and rice, then stir in chicken stock and bay leaves. Bring to a boil, then reduce heat, cover, and simmer 30 minutes, or until rice is tender. Stir in the Worcestershire sauce, liquid smoke and hot pepper sauce.

You can add more hot sauce to make it more spicy.
