Herb Crusted Salmon Fillets

Introduction

This is a foolproof way of cooking salmon fillets. This is a foolproof way of cooking salmon fillets.
Number of Servings: 4

Ingredients

    4 small Atlantic Salmon Portions (@ 4oz (120g) each
    1 cup Wholegrain Breadcrumbs
    2 Tblspn Chives, roughly chopped
    2 Tblspn Parsley, roughly chopped
    1/2 Tsp Garlic Powder
    1/2 Tsp Onion Powder
    1 Tsp Lemon Peel, grated
    1/4 cup Lemon Juice

Directions

Pre-heat oven to @400 deg F (@200 deg C)

Season salmon fillets lightly on both sides with salt and pepper . Place skin side down on an oven tray lined with baking paper.

Process all ingredients, except the lemon juice, in a food processer until combined and chopped.

Sprinkle the salmon portions with lemon juice and put the breadcrumb mixture on top of the salmon fillets, pressing down on top.

Spray lightly with canola spray, and cook for @10 to 15 minutes until just cooked.

NOTE: You can vary the herb blend, or sprinkle with low sodium soy and add ginger etc for an asian taste.

    Really really good! The flavor was great and it was very easy! I added lemon juice after baking, and agree with the other comments that you don't have to add as much bread crumbs if you don't want to. YUMMY! - 12/8/08

    Thanks for your comment and I'm glad you enjoyed the recipe. Sometimes the salmon fillets come in different sizes, the amount of crumbs will depend on the fillet size.

    what other spices would you use? I've never fixed salmon but I want to try it and this looks like the best recipe. - 11/14/08

    You could try dillweed, basil and I'm told (although I haven't tried it) that rosemary is nice with fish. You could also sprinkle it with another juice or balsamic vinegar for a different taste.

    This recipe is a keeper! Only change I made is that I drizzled a bit of olive oil in the processor instead of using the Canola spray. My husband and I both loved it - YUM!!! - 1/18/10

    This was very good. I made it with what I had on hand, so I did a couple of exchanges and am sure it would have been better if I'd had all the right ingredients. I'll definitely try it again. My kids really liked it! - 11/5/09

    I made this tonight. I used fresh thyme instead of chives, and Panko. It was okay, but maybe I'll try other herbs. My mom felt that it tasted too fish, so she wasn't happy. I liked the I liked the Panko, but dad thought it was too crunchy. I'll try regular breadcrumbs next time. - 9/11/09

    Anyone know how Panko crumbs might work? Don't they get crunchier? This does sound good and a different spin on plain fish. - 7/23/08

    I haven't tried it with panko, but they're breadcrumbs, so I would think that it would work.

    Very good. I left out the bread crumbs, but put my husband's portion on a whole wheat sandwich roll with some dill mayonnaise. I ate mine without bread with steamed asparagus. A 3 oz. portion filled me along with the asparagus. - 1/28/10

    This sounds easy....must try the lemon juice and parchment paper.
    I usually use an all purpose seasoning and olive oil and let it soak overnight and bake for 15 mins. I must give this a try probably with italian seasoned breadcrumbs mixed wth parmasean cheese. Either way, it sounds yummy!!!! - 1/8/10

    I thought this was very flavorful and did not have that 'fishy' taste that salmon often has. I used Panko breadcrumbs mixed with onion powder, garlic powder, and lemon pepper seasonings. Even my dad who doesn't eat salmon liked it! - 12/14/09

    I haven't as we don't get Tilapia here in Australia, but I would imagine it would work for any semi to firm fish. You can also add different herbs etc that you like to change the flavour and make it more to your liking.

    It would be worth a try!! I reckon recipes should not be carved in stone, so I'd give it a go, I think you'd have to make sure the chicken was a uniform size, but other than that why not!!

    I tried it, and it was not bad. I think I messed up on the breading. It didnt come out brown, it was green! Kinda wierd, .. it looked nothing like the picture. I wonder why? Well anyways, it still had a lot of flavor. - 9/1/09

    Sorry you had green crumbs!! Maybe a little less on the processing.LOL I used a fan forced oven, maybe that made the difference with the browning.

    Made this one tonight. It was ok. I tried to go easy on the lemon (for my husbands sake), so I didn't put the lemon juice on before the breading. I think that may have caused it to be too dry. Not a big hit with my bunch...but, it may have been better if I hadn't changed it up a bit. - 7/9/09

    1"1/2 thick, if you use thinner fillets cut down the cooking time

    Really good! I think I used the wrong type of bread crumbs, but it was still awesome. I did add a little bit of low sodium soy sauce and ate it with some asparagus. Delicious! - 7/6/09

    Very good but careful with the lemon. Used the juice of one half a fresh lemon, plus I added the zest to the crust mix (perhaps the dried "lemon peel" from the spice rack is less potent). While I enjoyed it, two of my three sons complained it was too lemony. - 1/11/09

    This salmon recipe is just OK. It doesn't add much flavor to the salmon, in fact, it takes away from the great taste of the fish. Something's missing, a flavor like almonds, coconut, etc. The topping is rather bland. I'd rather have no crust or a crust w/more taste (to make the effort in prep time) - 12/27/08

    Turned out great! Not too "fishy" with the lemon juice, and the breadcrumbs gave it a great texture. My 6-year-old and my picky husband each downed a fillet.
    Didn't have baking paper, so used foil - still worked great to get the skin to stick and peel off, which saved the mess there. - 9/14/08

  • I'm not a big fan of fish, but this actually was really good! Just make sure to drain the fish first if there's lots of juice from the packaging... my oven started smoking a lot. Also, no need to mess with a food processor, just mix the dry ingredients and go. - 8/25/11
