Introduction

This traditional Spainsh Tortilla is great for breakfast, lunch, or dinner and is low cal/fat and high in protein! This traditional Spainsh Tortilla is great for breakfast, lunch, or dinner and is low cal/fat and high in protein!

Ingredients

    2 cups cubed potato, boiled
    5 eggs
    3 cloves garlic (or to taste)
    1 cup diced green pepper
    salt and pepper to taste
    7-10 green olives, sliced, for garnish

Directions

Beat eggs, then mix in cooked potato, garlic, green pepper, and salt and pepper. Spray an oven-safe dish with non-stick cooking spray. Pour in egg mixture.

Bake at 350 degrees for 25 to 30 minutes. Cut into wedges, cubes, or quarters.
