Introduction

Number of Servings: 8

Ingredients

    2 cups Brown Rice (cook as directed)
    1 can Bush's Chili Beans
    1 cup Yellow Sweet Corn, Frozen, Or one can mexicorn
    .50 (1/2) cup Sour cream, fat free
    4 Lg Bell Peppers, any color, halved lengthwise and seeded
    1 cup Kraft 2% Shredded Cheddar Cheese,
    Garnish:
    Cilantro, raw (optional)
    4 Tbsp Salsa

Directions

Make the rice as directed.
When rice is done heat oven to 350 deg.
Mix rice, beans, corn, cheese, and sour cream in a large bowl.
Spoon heaping 1/2 cup filling in to each bell pepper half.
Place in 13x9 baking dish and cover with foil.
Bake at 350 deg for 50-60 minutes or until peppers are tender.
Top each pepper with some salsa and cilantro.
Serving is 1/2 pepper.
