My Chicken

Introduction

I like to do this with left over cooked chicken. Can be done with Rotisserie chicken too! I like to do this with left over cooked chicken. Can be done with Rotisserie chicken too!
Number of Servings: 2

Ingredients

    2 Chicken thighs, cooked and shredded no skin or bone
    1/2 cup Tomatoes, chopped
    1/2 cup Onions, chopped
    1 Jalapeño Pepper, chopped (optional)
    1/2 tbsp. Olive oil
    1 Garlic clove, minced

Directions

1. Chop, mince, and shred all the required ingredients.
2. Heat a skillet with Olive oil.
3. Add minced Garlic and stir fry for about 30 seconds.
4. Add onion and stir fry for about 1 minute.
5. Add Jalapeño and add for another 1 minute or so.
6. Add Tomato and shredded chicken.
7. Stir everything together and cooke for about 10 minutes or until all ingredients are incorporated.
8. Add salt and pepper to taste.

Serve with tortillas or just by itself. I love this with corn tortillas!!

Makes: 2 servings, amount of 1 thigh each and equal parts of veggies.
