1/4 cup raw pepitas
1 medium tomato
1 medium onion
1 tbsp lime juice
1/2 cup black beans
cilantro, salt, pepper to taste
Variations: I ate this with something that was already quite spicy. If you wanted to make the salsa itself spicy, feel free to go ahead and add some jalapeno!!
If you want to seriously cut down on the calories, you can easily eliminate the beans, the pepitas, or both.
