33 calorie spinach balls

Introduction

Ingredients

    2 (10 oz.) packages of frozen chopped spinach
    3 cups herb seasoned stuffing mix (dry)
    1 large onion, finely chopped
    1 cup Parmesan cheese
    5 large eggs, stirred
    1/3 cup butter, melted
    1 tsp garlic powder
    1/2 tsp salt
    1/2 tsp pepper

Directions

Cook and drain spinach. Set aside to cool. Preheat oven to 335 degrees. I use a non stick cookie sheet.
Combine ingredients in this order: stuffing mix, seasonings, Parmesan cheese, onion, butter, eggs, spinach. Make into 1 inch balls.
Place on a non stick or sprayed cookie sheet. Bake at 335 for 10 minutes, turn balls over and bake for another 10 minutes. Makes 55.
Calorie count is for each ball. Allow 4 per serving as an appetizer for 132 calories. I calculated the calories for each ball as I eat anywhere from 2 to 6 depending on what else is served.
