"stuffed" pepper soup

Introduction

Easy way to enjoy stuffed peppers in half the time. Easy way to enjoy stuffed peppers in half the time.
Number of Servings: 10

Ingredients

    3 cups green pepper strips
    1 cup red pepper strips
    2 lbs 93/7 ground beef
    tomato soup (can also use pasta sauce, watered down to soup consistency)
    4 oz cheddar cheese, cubed(optional)
    4 oz mozzarella cheese, cubed(optional)
    1 cup wheat germ
    1 egg

Directions

put tomato soup into large pot and heat on med-high. Soup should fill about half a large spaghetti pot.
mix wheat germ, cracked egg into lean ground beef.
cube cheese and kneed into meat mixture.
round meat into palm-sized meatballs. Drop into hot soup.
cut green and red peppers into strips. Put into soup.
Heat to a steady boil and then reduce heat to just below boiling. Total cook time- about an hour. (45-50 minutes from after you drop the meat in.)
Makes about 10 -1.5 cup servings.
