Introduction

Hearty, Thick, and Creamy Vegatable Soup Hearty, Thick, and Creamy Vegatable Soup
Number of Servings: 10

Ingredients

    1 lb. carrots, cleaned and chopped
    2 turnip roots, peeled and diced
    1 onion, peeled and finely chopped
    1/2 cup TVP
    5 cups chicken or vegetable stock
    2 bay leaves
    1 tsp cardamom
    1/2 cup soy milk

Directions

Combine vegetables, TVP, stock, and bay leaves in a pot. Bring to a boil and then cover and simmer for about 45 minutes. Remove bay leaves, puree soup in a processor or blender and then return to pot. Stir in cardamom and milk and reheat.

May be garnished with a little sour cream or yogurt and some fresh herbs when serving.

Makes 10 servings of slightly more than 1 cup each..
