Egg[less] Salad



Introduction

Vegan version of egg salad using tofu and soy mayonnaise. Vegan version of egg salad using tofu and soy mayonnaise.
Number of Servings: 4

Ingredients

    1 lb drained extra-firm tofu
    Soy mayo to taste (1/4 cup-ish)
    2 tbsp mustard
    1 tsp cumin
    1 tsp garlic powder
    1 tsp onion powder
    salt and pepper to taste
    1 medium carrot, chopped
    chopped scallions, to taste

Directions

Thoroughly drain tofu. Mash with fork or potato masher, add mayo, mustard, spices, and chopped carrot and scallions. Mix well; refrigerate at least 1 hour to allow flavors to mix. Serve on whole-grain bread.

Makes 4 servings.
