Chicken Paprika Spaetzle Soup

Introduction

This dish is delicious! It's a great substitute for chili on a cool fall or winter day. You can substitute another brand of egg noodles if you prefer, but the german noodles are best, I think. Ingredients

10 oz. boneless, skinless chicken, cubed
    1 cup onion, chopped
    1/2 cup celery, chopped
3 cups 99% fat free chicken broth
    3 cups water
    3 tbsp. paprika
6 oz. german egg noodles, measured dry
1 cup (16 tbsp.) no fat sour cream
salt and pepper to taste (not included in nutrition values)

Directions

Spray a large pot with Pam spray and cook the cubed chicken until browned, then remove from pot.
Spray again with Pam and add onion and celery. Cook about 3 minutes or until translucent.
Add broth, water, paprika and chicken to pot.
Bring to a boil.
Add the egg noodles and cook the recommended length of time according to the packaging.
Remove from heat, stir in sour cream and serve.

Bon appetite!

If you want more veggies, broccoli or zucchini would also be great additions.
