Cinnamon Raisin Applesauce Muffins

Introduction

Yummy, low-fat muffins that are perfect as a light snack or after-dinner treat. Yummy, low-fat muffins that are perfect as a light snack or after-dinner treat.
Number of Servings: 12

Ingredients

    - 1 1/2 cups flour
    - 1/2 cup sugar
    - 2 teaspoons baking powder
    - 1/2 teaspoon salt
    - 1 teaspoon ground cinnamon
    - 1/2 teaspoon ground ginger
    - 1 egg, beaten
    - 1/2 cup milk
    - 1/3 cup unsweetened applesauce

Directions

- Mix flour, sugar, raisins, baking powder, salt, cinnamon and ginger together in a bowl.
- Then mix the egg, milk and applesauce in another bowl.
- Stir the dry ingredients into the wet.
- Spoon into greased muffin tins (fill halfway for smaller muffins or 3/4 for bigger, deli-style muffins)
- Bake at gas mark 6 (400 degrees) for 20 minutes or until a toothpick inserted into the top of the muffin comes out clean.

Makes 12 smaller muffins or 9 larger

For a tasty topping, brush the tops of the muffins with melted butter and dip them in a mixture of sugar and cinnamon. Yum!
