Turkey Meatloaf

Introduction

This is my meatloaf I eat when the rest of the family eats "real" meatloaf. The stuffing helps add a litltle more moisture to the loaf. This is my meatloaf I eat when the rest of the family eats "real" meatloaf. The stuffing helps add a litltle more moisture to the loaf.
Number of Servings: 6

Ingredients

    1# Ground Turkey ( I use 85/15)
    1/2 of a Box of Stuffing Mix ( I use pork flavor)
    1/4 C Liquid Eggs (or 1 egg)
    Water
    1/4 C Tomato Sauce
    1/4 of a Bell Pepper ( any color), Chopped
    1/4 C. Onion, Chopped

Directions

Put 1/2 of a box of stuffing mix in a bowl. Add just enough water to moisten it. Add the rest of the ingredients. Mix it up well with your hands. Place in a 9 x 13 pan and form it into a long loaf. Cover and Bake at 350 degrees for 1 to 1 1/2 hours depending on how fat your loaf is. Make sure it is cooked all the way through because this is poultry.

You can also top this with Ketchup, Tomato Paste, or BBQ Sauce for the last 30 minutes and leave uncovered.
