French Style Beef Roast

Number of Servings: 8

Ingredients

    3 # Rolled Rump Roast
    1 Tsp Salt
    1 Tsp dried Thyme leaves
    1 bay leaf
    1 Lg Garlic Clove, cut into fourths
    4 Cups of water
    4 Med Carrots, cut crosswise into halves or fourths
    2 med Onions, cut into fourths
    2 Med Celery, cut into 1 in pieces

Directions

Place beef roast, salt, thyme, bay leaf, garlic into dutch oven;add water. Heat to a boiling; reduce heat. Cover and simmer for 3 hrs.

Add remaining ingredients. Cover and simmer until beef and vegtables are tender, about 30 min. Remove beef and veg; cut beef into 1/4 in slices. Strain broth; serve with beef and veg.

Makes 8 servings

Serve with Cheery Layered salad and biscuits.
