Lowfat Johnnycake

Introduction

Number of Servings: 6

Ingredients

    1/2 cup original EggBeaters egg whites
    1/2 tsp salt
    2 Tblsp unsweetened applesauce
    1Tblsp pure Maple syrup
    1 cup whole grain corn flour
    1 cup whole grain flour
    2 tsp baking powder
    1 cup nonfat milk

Directions

Spray with nonstick cooking spray a 8 inch iron skillet (or an 8 inch square baking pan)
Preheat over to 425.
Into a large bowl pour the eggbeaters and add salt. Whip until light. Beat in MAple syrup and applesauce.
On a length of wax paper sift the cornflour, whole grain flour and baking powder.
Alternately add this and the cup of nonfat milk to the bowl. Blend well.
Pour the batter into the sprayed skillet (or baking pan). Work it so it is evenly spread in the pan.
Bake in the 425 degree oven for 20 minutes.
Pierce the bread with a wooden toothpick. If it comes out clean, the bread is ready.
Remove bread from oven. Serve warm.
(goes great with chili)
