Number of Servings: 8

Ingredients

    3 C Brown Rice, cooked
    1 can Kidney Beans
    3 cloves Garlic
    1 t Salt
    1 large Onion, chopped
    1.25 C Ricotta Cheese, part skim
    1 Cup shredded Cheddar Cheese 2%

Directions

In large bowl combine rice, beans, garlic, salt and onion. In casserole dish layer rice and beans, then ricotta, then cheddar. Repeat layers. Bake at 350 degrees for 30 minutes.
