Ingredients

10 cups water
1 lb dry lentils, rinsed
1 large carrot, grated
1/2 onion, diced
1 10 oz pkg frozen spinach
1/4 cup vinegar
2 tsp curry
Directions
Combine water, lentils, carrot, and onion in slow cooker. Cook on high for about 1 hour and then turn down to low for aboiut an additional 4 hours. Add spinach, vinegar, and curry 30-60 minutes before done.
