IntroductionEasy low call vegetable soup. Can add any other vegetables as desired. Easy low call vegetable soup. Can add any other vegetables as desired.
- Any type of vegetable boullion or broth packet
- Diced carrots, celery, and onions (I used a mix available at Trader Joe's)
- One cup rotini (curly pasta)
- One cup stewed tomatoes
- One small red potato, cut into small cubes
- One or two bay leaves
(Add salt to taste or leave out for low sodium version. Nutrition info does not include extra salt.)
Add stewed tomatoes to broth along with bay leaves. Add chopped small vegetables and potatoes. Add rotini.
Takes about 10 to 15 minutes to cook evenly at a high temperature. Makes about three one cup servings.
