No Crust Pumpkin Pie

Ingredients

    2 1/2 Cups Pumpkin
    1 egg
    1 cup Splenda Sugar
    1 teaspoon Salt
    2 teaspoon Cinnamon
    2 teaspoon Pumpkin Pie Spice
    1 Cup Skim Milk








Directions

Mix pumpkin,egg, sugar well. Add salt, cinnamon, pumpkin pie spice and milk mix and add to pumpkin mixture. Spray pie pan with pam cooking spray, pour batter in pan pan. Bake at 400 for 40-45 minutes.

    My mother in law can't have gluten so this is perfect. I added nutmeg and vanilla. Also 1/2 a mashed banana for flavor. - 3/14/07
