Quinoa Salad

Introduction

Quick and easy chicken salad that has your good carbs and fiber included! Makes a great and hearty meal! Quick and easy chicken salad that has your good carbs and fiber included! Makes a great and hearty meal!
Number of Servings: 1

Ingredients

    3 oz Chicken Breast
    2 cups Lettuce Mix
    .25 cup Quinoa
    .5 oz Walnuts
    .5 oz Feta Cheese
    2 tablespoons Balsamic Vinegar

Directions

Cook the quinoa first by boiling in microwave for about 5 minutes. Use approx 1c water. Quinoa is done when the seed grains "pop". You can then stick it in the freezer for an additional 10 minutes while you prepare the rest of the salad.

Cook chicken. I cook mine on BBQ and it takes about 15 minutes.

Mix salad with rest of items except balsamic vinegar.

Top salad with chicken and quinoa.

Add Balsamic Vinegar to taste. (or make a variation by using your own dressing).

You can reduce the amount of fat by cutting back or eliminating the walnuts and/ or feta.
