No-Squish Butternut Squash

Introduction

Number of Servings: 4

Ingredients

    1 Medium Butternut Squash
    1/2 cup of white wine
    2 tsp of cinnamon
    2-3 tablespoons of herbs (I usually use oregano & rosemary but this is totally do-able with whatever you have in the house)

Directions

1. Peel & cut butternut squash into cubes
2. Put sqush into a 9 x 13" roasting pan
3. Drizzle the white wine & herbs over the sqush
4. Mix everything up, making sure the sqush cubes are evenly coated with the wine & herbs
5. Bake at 350F degrees for 40-45 minutes OR until squash cubes are soft
*yields 4 hearty servings*
