Norwegian Rye Rolls

Introduction

this recipe was a gift from a man I met while traveling. He was a brilliant man working on HIV treatment and prevention. He made these rolls for himself 2 or 3 times each week, and found that the rye flour (whole rye, not refined) was beneficial to him, moreso than regular wheat flour. They are dense and moist and satisfying, dark and flavorful. Make sure to salt the dough also - about a tsp. this recipe was a gift from a man I met while traveling. Ingredients

    1/2 kilo rye flour (about 5 cups)
    2 cups tepid water (about 100F)
    2 Tbs flax seeds
    2 Tbs pumpkin or sunflower seeds
    1/2 or 1 Tbs olive oil
    1 tsp sea salt
    a drop of honey

Directions

mix all ingredients until they are homogenous. i might experiment with different amount of working, stirring or kneading, but Birger's original recipe requires no working of the dough. Just mix well and set aside (not too cold) for 3-6 hours. Then drop rolls onto a sprayed sheet using a spoon and spatula, and bake at 400 for 30 minutes, or until the dough is cooked through the center of the dough.
