Acorn Squash with Cranberries & Raisins

Ingredients

    Acorn squash, 1 whole
    KNOTTS BERRY FARM Apple Cinnamon Jelly-2 tsp
    20 raisins or a handfull
    20 cranberries if desired
    a sprinkle ground cloves
    Cooking spray

    NOTE: I used KNOTTS BERRY FARM Apple Cinnamon Jelly but I could not find it in the ingredient listing.

Directions

Serves 2
Heat oven to 350
Slice acorn squash in 1/2, remove seeds. Place cut side down on foil lined baking pan that has been sprayed with a little bit of cooking spray.
Cook until soft.

Turn squash halves right side up and add 1 tsp jelly to the center well of each 1/2 of squash, add raisins and cranberries, sprinkle with ground cloves if desired
Cook until jelly melts and raisins puff up.

  • when adding jelly and fruit, is the squash just turned cut side up and the hole is filled or is the squash removed from its "peel" and placed in a dish first? - 10/12/08

    Turn the squash right side up and put the jelly & fruit in the center well of each 1/2 of the suqash.
