Low Sugar Peanutbutter Chocolate Ice Cream

Introduction

While not exactly "diet food," this ice cream recipe is lower calorie than regular ice cream, and, best of all, those of us with DFI can enjoy it! While not exactly "diet food," this ice cream recipe is lower calorie than regular ice cream, and, best of all, those of us with DFI can enjoy it!
Number of Servings: 12

Ingredients

    2 cups fat free half and half
    1 1/2 cups equal spoonable (or other tolerated sugar substitute)
    1/2 cup Skippy Natural Peanut Butter
    1 teaspoon vanilla extract
    2 cups whipping cream
    1/2 cup chopped dark chocolate pieces (at least 60% cocoa)

Directions

Combine half and half, sweetner, peanut butter, and vanilla and mix well with wire whisk. Stir in whipping cream. Freeze as per directions on your ice cream freezer. Note that this is a fairly small recipe (approx. 1 1/2 quarts frozen). Add chocolate pieces at the end of freezing (If you add them early, they will sink to the bottom of the ice cream rather than mixing in).
