Ingredients

    1 lb skinless, boneless chicken breast
    1 Tbsp canola oil
    2 tsp taco seasoning - or to taste
    2 cups cooked whole wheat couscous
    2 cups corn, canned or frozen
    1 cup fat-free cheddar cheese, shredded
    1 cup salsa

Directions

Cut chicken breasts into 1 inch cubes. Saute in pan with oil and taco seasoning until cooked through.

Mix chicken, couscous, corn, and cheese in large bowl with salsa. Makes roughly four 1 1/4 cup servings.
