Everyone's Favorite Muffins

Introduction

These light, low fat muffins come from the Set For Life Book. I replaced the oil with applesauce, and they are fabulous! They're great for breakfast, a snack, or even as a desert with a little fresh fruit. These light, low fat muffins come from the Set For Life Book. Number of Servings: 12

Ingredients

    2 cups whole wheat flour
    1 tbls. baking powder
    1/2 ts. salt
    1/4 cup sugar
    1 large egg
    1 cup skim milk
    1/4 cup applesauce

Directions

Mix dry ingredients. Combine remaining ingredients, then pour into dry ingredients. Stir only until combined; longer makes muffins tough. Fill nonstick or greased muffin tins 2/3 full. Bake at 400 degrees for 12-15 minutes. Makes 12 muffins
