Healthy Chicken Noodle Soup

Introduction

A healthier version of chicken noodle soup A healthier version of chicken noodle soup
Number of Servings: 8

Ingredients

    18 oz. Chicken Breast, cut into cubes
    1 can Chicken Broth, fat free & low sodium
    4 cups of water
    1 3/4 cups of Celery
    16 oz package of frozen Carrots
    1/2 TBSP. Parsley
    1 tsp. Curry Powder
    2 cups Whole Wheat Egg Noodles
    Salt and Pepper to taste

Directions

Pour chicken broth into pot and add cubed chicken. Cook on medium heat till chicken is no longer pink. Add water, carrots, celery, parsley, curry powder. Cook for 5 mins on high heat. Then turn down to meduim heat and add egg noodles. Cover with lid and cook untill celery and pasta are tender. Makes approx. 8-1cup servings

  • I did something like this last night, only I added some frozen mixed vegetables. The mixed veggies I added didn't have potatoes in it. I do not care for frozen potatoes. Then instead of the curry I used onion powder, celery seed and added some Mrs. Dash. I forgotten about curry, and I love it. - 12/29/11
