Oatmeal Pancakes

Introduction

This is my mom's Oatmeal Pancake recipe, they are my households favorite pancakes, I rarely make any other kind. This is my mom's Oatmeal Pancake recipe, they are my households favorite pancakes, I rarely make any other kind.
Number of Servings: 5

Ingredients

    Milk - 2 cups
    Uncooked Oatmeal - 1 1/2 cups
    Salad oil - 1/3 cup
    Eggs - 2
    Flour - 3/4 cup
    Sugar - 2 tbsp
    Baking powder - 2 1/2 tsp
    Salt - 1 tsp
    Cinnamon - 1 tsp

Directions

- combine milk and oatmeal and let set for 2 minutes
- then add the rest of the ingredients and mix
-heat up pan or griddle
-use 1/4 cup for pouring out each pancake
-when air bubbles start to form, flip pancakes
-eat and enjoy when their is no more batter

makes about 15 to 20 pancakes

you can use apple sauce as a sub for the oil and reduce the K cals, but if your diet allows for the fat intake they are much better with oil.

  • I think this could be made healthier by lowing the fat content ... use vanilla soy milk , eggbeaters, replace oil with applesauce... I will try to make this one over. - 1/14/09
