Introduction

Great dish I made with leftove Chicken Thighs. Delious 1 dish meal. Great dish I made with leftove Chicken Thighs. Delious 1 dish meal.
Number of Servings: 8

Ingredients

    Chicken, thighs 4 no bones no skin
    Water 2 cups
    Mixed vegetables 15 oz can
    Publix Instant White Rice 2 cups
    Vegetable Oil 1 tbsp
    Bay leaf, 2 leaves
    Garlic powder, 1 tbsp
    Goya, adobo seasoning salt 1 tbsp
    Bijol, substitute for saffron, dash

Directions

Boil Water
Cut Chicken from the bone
Mix all ingredients in a large microwavable dish
Stir and microwave on high for 9 minutes
Remove Bay leaves.
Fluff with fork and serve

Make 8 1 cup servings
