Beef Borscht Crock Pot

Ingredients

    10 oz extra lean grd beef
    1 lrg or 1 1/2 med beets (shredded)
    1/2 lb babby carrots (shredded or sliced)
    1 med white potato (shredded)
    1/2 med onion (diced)
    1 c beef broth
    2 c water
    1 tsp salt
    1 tsp pepper
    1 tsp dill weed
    1/2 small lemon (juiced)

Directions

Brown beef and drain extra fat. Add beef to crockpot then layer with veggies, spices and liquids.

Cook on high for 4 hours.

Try with low to no fat sour cream. Combine cottage cheese and non fat plain yogurt with a touch of lemon (optional) in blender and blend til smooth. Very delicious and nutritious.
