Ingredients

1 lb Asparagus, fresh
2 Baguettes
4 Tbsp Horseradish sauce
2 slices Red Onion
6 slices Tomatoes, halved
1.5 oz Mozzarella Cheese
Directions
Trim the woody end off of the asparagus by finding the breaking point and snapping all the ends off. Then cook your asparagus. You can do this in the microwave (put in a cover dish with 1/4 cup water for 4 - 8 minutes) or you can drop it in boiling water for 2 minutes then take out and place in ice bath.
Meanwhile cut your baguettes in half lengthwise. Spread 1 Tbsp of horseradish evenly onto each half.
Top each baguette half with cooked asparagus, red onion, and tomato. Cut cheese into 1 inch wide strips and arrange over tomato (or sprinkle shredded cheese) . Place sandwiches on a broiler pan or ungreased cookie sheet.
Broil 4 to 6 inches from heat for 1 to 2 minutes or until cheese is melted.
