Artichokes and Beans

Number of Servings: 4

Ingredients

    1 can of salad beans (garbanzo, black, and kidney)
    3/4 cup, each frozen zucchini and broccoli
    1 cup chopped red onion
    1 small jar marinated artichoke hearts with oil
    2-3 roasted red peppers
    1/2 can fire roasted tomatoes, drained
    1/4 cup of kalamata olives, chopped

Directions

Saute onion until soft. Add frozen zucchini and broccoli. Then add beans and tomatoes. Cook until heated through. Add the whole can of artichokes, 2-3 red pepper, and a handful of chopped kalamata olives. Serve over polenta.
