Mindy's Homemade Chicken Soup

Introduction

2 cups is a serving so enjoy it. 2 cups is a serving so enjoy it.

Ingredients

    4 split chicken breast done in the crock pot with 2 cups water, 4 tbsp butter, salt and pepper - about 2.5 hours,
    steam carrots, celery and onion in the steamer and save the water for vegetable broth

Directions

once the chicken is done take them out and pick the meat off and discard the bones and skin in a tall pot with 4 - 6 cups water to make more chicken broth, cube the chicken.
Strain the broth left in the crockpot into the tall pot and then strain the tall pot back into the crockpot. Add the vegetable broth, chopped carrots celery and onions and the strained chicken broth. Salt the chicken cubes once more and toss into the crockpot. Let it simmer in the crockpot for another 3 minutes and then let cool to be packed up for lunches in the fridge or freezer for another day.
