Bacon, Egg and Cheese Grits

Number of Servings: 8

Ingredients

    1 cup grits
    4 cups water
    1/4 cup Blue Bonnet Light margarine
    1 tsp salt
    2 cups shredded cheddar cheese
    3 large eggs
    1 cup milk
    4 slices Publix low sodium bacon (60 cal/2slices)

Directions

In a pot on the stove, combine grits, water, salt and margarine. Bring to a boil over high heat and simmer for about ten minutes. Stir in cheese until it melts.

While grits are cooking, fry up the bacon and drain well. Crumble bacon and stir into grits right after cheese. Combine eggs and milk in a bowl and mix until completely blended. Stir it into the grits last, beating quickly so the eggs don't scramble.

Pour into a well greased baking dish and bake at 350 degrees F for 20 minutes. Serves 8.

  • I left out the butter and instead of bacon i used some leftover ham. cut the fat calories but i ended up adding salt to it.... - 2/20/11
