Mexican Chicken Soup

Introduction

This colorful, fresh tasting soup is great at chasing away winter blahs. This colorful, fresh tasting soup is great at chasing away winter blahs.
Number of Servings: 8

Ingredients

    4 boneless, skinless chicken breasts, boiled and shredded
    1 tsp olive oil
    4 cups clear chicken broth
    2 cups water
    1 small onion, diced
    3 stalks celery, chopped
    1 cup chopped or grated carrot
    5-8 cloves garlic, minced
    1 large (28 oz) can tomatoes, diced
    1 can whole green chiles, coarsely chopped
    1 can vacum-packed summer-crisp corn
    1 1/2 cups brown rice
    1 bunch fresh cilantro, chopped (discard long stems)
    2 tsp chili powder
    1 tsp ground cumin

Directions

In a large stock pan, heat oil and add onion and celery and carrots. Sautee, stirring, until vegetables start to soften. Add garlic and sautee about 1 minute before adding broth and water.
Add all remaining ingredients except cilantro and corn. Stir and simmer, covered, on medium heat for about 40 minutes or until rice is done. Add corn and *cilantro and simmer another 5-10 minutes. Serve hot.

*Alternatively, cilantro can be used as a garnish so individual tastes can be met.
