Ingredients

    Apple juice, unsweetened, 5 cups
    Apples, fresh, 15 cups slices
    Cinnamon, ground, 1 tbsp
    Ginger, ground, 1 tsp
    Cloves, ground, .5 tsp
    Nutmeg, ground, .5 tsp
    Brown Sugar, 2 cup, unpacked

Directions

Cut apples and take out seeds. You may peel if you don't have a food mill to run the cooked apples through at the end of the cooking time. I leave the peels on so I get those vitamins, too.
Add the apple juice to a large cooking pot so that as you slice the apples you can put them in and they won't turn brown on you.
After all the apples are sliced into the juice, cook on medium heat until the apples get soft. Stir often so they won't stick to the bottom of the pot.
When the apples are soft add the rest of the ingredients and cook until it thickens to desired consistency. This should make about 12 cups of apple butter after it cooks down.

  • I made this from my homegrown apples and it turned out delicious! It was a hit! I only got 3 pints (6 cups or 12 half cups) from the recipe once it cooked down though, which doubles the calories (sigh). - 7/9/09
