Ingredients

6 chicken thighs, skinned & deboned, cut into strips
1 (4 oz) package fresh shiitake mushrooms
1/8 tsp salt
3 cups broccoli slaw mix
2 tbsp hoisin sauce
Directions
Spray nonstick skillet with nonstick spray and set over medium-high heat. Add the chicken and cook, stirring occasionally until lightly browned and cooked through. Transfer chicken to a plate. Spray pan with more nonstick spray. Add mushrooms and salt; cook, stirring occasionally, until the mushrooms are softened. Add the slaw mix and cook until tender. Add the chicken and cook, stirring frequently until heated through, about 1 minute. Remove from heat and add hoisin sauce. Serve with low fat/high fiber tortilla, or over rice (not included in nutrition information)
