Fruity French Toast Sandwich

Submitted by: DFEE190

Introduction

I found these in a cooking magazine (taste of home cooking for 2 fall 2006) and modified it slightly by doubling the recipe (total of 4 servings). These are great, very easy to make and my family loves them! Number of Servings: 4

Ingredients

1 fresh banana (any fruit you choose, add more if you like)
    8 slices french toast bread
    2 eggs
    4 tablespoons Vit D milk
    1/2 teaspoon ground cinnamon
    1/2 teaspoon vanilla extract
    2 teaspoons vegatable oil
    spinkled powdered sugar

Directions

Slice the french toast bread diagonally. Slice up fruit of choice and place a single layer of fruit on half of the triangles of french toast bread; Top with other triangle making a total of 8 triangular sandwiches. If you like, cut up extra fruit for topping (not included in nutritional info).

In a shallow bowl beat egg, milk, cinnamon, and vanilla. Dip both sides of the sandwiched in egg mixture. Heat oil in griddle, cooking each sandwich for 3-4 minutes or until golden brown. Sprinkle with powdered sugar and additional fruit. Makes 4 servings (2 triangular sandwiches each)
