Pumpkin Pie Oatmeal

Great Fall recipe and fun and delicious way to get in your vegetables!



Ingredients

    1 cup water
    1/2 cup canned pure pumpkin
    1/2 cup old-fashioned oatmeal
    1 Tablespoon cinnamon
    1teaspoon pumpkin pie seasoning
    2 Tablespoons Stevia


Directions

In a small pot, bring water to a boil
Stir in pumpkin and remove from heat, turn heat to low.
Stir in oats and put pot back on burner, gradually increasing heat to medium low - reduce heat if it begins to bubble or splatter.
Cook for 7 minutes until oats are cooked and fluffy.
Stir in cinnamon, pumpkin pie seasoning and Stevia.

Ready in 15 minutes. Makes 2 servings

I made this recipe and it was just OK. May have been better with quick quick oats instead of old fashioned. Nutritional info was off because it didn't include all ingredients.

The ingredients list shows only the pumpkin - that's why the NI is wrong. But the recipe itself says it serves 2, then makes 1 serving. Please correct this

O.K.
The calorie count is way off, as the oatmeal alone would be 150 calories... Anyway, I tried this and had to toss it. I only could stomach one bite... I tried adding sugar, and it was just a waste. (Then, again, I don't like pumpkin pies... I love oatmeal & pumpkin bread... but not this.)

Thank you! It's great on those chilly mornings. I make it each week, tripling the recipe. One thing I tried is to not include the Splenda when I make it and just put that on each individual serving. Again, thank you for your comment, I truly appreciate it.

carb count must be wrong - oatmeal has 26 g of carb per half cup.
